Pecan muffin
Ingredients:
 
  • 2 cups all-purpose flour
  • 1/2 cup pure maple syrup
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
 
Method:
 
  1. Preparation: Preheat oven to 375°F (190°C). Prepare a muffin tin with liners or a light greasing.
  2. Dry Mix: In a bowl, blend flour, baking powder, and salt together.
  3. Wet Mix: Whisk together melted butter, maple syrup, eggs, milk, and vanilla in another bowl.
  4. Combine: Merge the wet and dry ingredients, stirring just until blended. Fold in pecans.
  5. Bake: Dispense the batter into muffin cups, filling each 2/3 full. Bake for 20-22 minutes or until an inserted toothpick is clean.
  6. Cool: Let muffins settle for 5 minutes in the tin before moving to a wire rack. Enjoy the sweet, nutty aroma and taste!
