Classic Pumpkin Spice Muffin Recipe

Ingredients:
 
  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 large eggs
  • 1 1/2 cups pumpkin puree (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 1 tsp pure vanilla extract
  • Optional: 1/2 cup chopped walnuts or pecans, and/or chocolate chips for added texture
 
Method:
 
  1. Preparation: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease them.
  2. Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, and spices until well combined.
  3. Wet Ingredients: In a separate bowl, beat the eggs, and then mix in the pumpkin puree, vegetable oil, and vanilla extract until smooth.
  4. Combine: Gradually add the wet mixture to the dry ingredients, stirring just until combined. If using, fold in the nuts or chocolate chips.
  5. Bake: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
