Classic Pumpkin Spice Muffin Recipe
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 2 large eggs
- 1 1/2 cups pumpkin puree (not pumpkin pie filling)
- 1/2 cup vegetable oil
- 1 tsp pure vanilla extract
- Optional: 1/2 cup chopped walnuts or pecans, and/or chocolate chips for added texture
Method:
- Preparation: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease them.
- Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, and spices until well combined.
- Wet Ingredients: In a separate bowl, beat the eggs, and then mix in the pumpkin puree, vegetable oil, and vanilla extract until smooth.
- Combine: Gradually add the wet mixture to the dry ingredients, stirring just until combined. If using, fold in the nuts or chocolate chips.
- Bake: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
